Garlic Chicken

Erin: Another pinterest recipe :) I have been meaning to make this recipe for a while because it looks delicious and super easy. Easy enough that Sam made it all by himself (I was feeling a little under the weather last night).



Ingredients:
4 boneless skinless chicken breasts
4 garlic cloves , minced
4 tablespoons brown sugar
3 teaspoons olive oil

What to do: 
1. Preheat oven to 500°F and lightly grease a casserole dish.
2. In small sauté pan, sauté garlic with the oil until tender.
3. Remove from heat and stir in brown sugar.
4. Place chicken breasts in a prepared baking dish and cover with the garlic and brown sugar mixture.
5.Add salt and pepper to taste.
6. Bake uncovered for 15-30 minutes.


I paired it with some asparagus and it was fab!


Chicken Pesto sandwiches

Erin; I'm always looking for good lunch recipes -- something I can make on a Sunday afternoon and then we can eat it for lunch the rest of the week. Anyway, I found a great recipe, chicken pesto sandwiches! Sam is a huge fan of pesto so I knew this recipe was going to be a winner :)

Ingredients:
1 (8oz) package of cream cheese, softened
1/4 cup of plain yogurt
1/3 cup of pesto (I bought it already made)
1/4 grated Parmesan cheese
2 cups cooked cubed chicken (I used a left over rotisserie chicken)

What to do:
1. Combine cream cheese, yogurt, and pesto together in a bowl and stir until smooth
2. Add cheese and stir, then add chicken
3. Make yummy sandwiches!

Twiced Baked Potatoes

Erin: I haven't had potatoes in FOREVER and last weekend I had a huge craving for them. I finally decided I had to make twiced baked potatoes and I'm so glad I did. It was fabulous! :)




Ingredients:

4 large baking potatoes
8 slices bacon
1 cup sour cream
1/2 cup milk
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded Cheddar cheese, divided

What to do:

1. Preheat oven to 350 degrees F
2. Bake potatoes in preheated oven for 1 hour.
3. Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
4. When potatoes are done allow them to cool for 10 minutes.
5. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins.
6. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese
7. Spoon the mixture into the potato skins. Top each with remaining cheese and bacon. (I added some green onions as welll)
8. Bake for another 15 minutes.

Red Pepper Couscous

Erin: Wow, I have not blogged in too long. I keep meaning to but I never actually get around to it. I have a lot of catching up to do! This is a simple, quick recipe for red pepper couscous, which is simple and delicious. I usually pair it with a chicken dish of some type. Perfection.

Ingredients:
1 cup cooked couscous
2 teaspoons olive oil
1/2 cup chopped onion
1/2 cup chopped red bell pepper
1/4 teaspoon salt

What to do:
1. Cook couscous according to package directions.
2. Heat olive oil in a skillet over medium-high heat.
3.Add onion, bell pepper, and salt; sauté 7 minutes.
4. Toss with couscous.

Chicken Roll Ups

Better late than never! :) These are amazing

What you will need:
1 8 oz package cream cheese
2 packages crescent rolls
2 shredded chicken breasts
2 cups grated cheddar cheese
1/4 tsp salt
1/4 cup parm cheese
1/4 stick melted butter
1/4 cup chopped/cooked broccoli

Directions:
1. In a medium sized bowl, mix cheese, salt, cream cheese, broccoli and chicken
2. Spoon into crescents
3. Roll up and make sure it is sealed in
4. Brush rolls with butter and top with parm cheese
5. Bake at 350 for 20 minutes

Italian Grilled Chicken

Erin: Oh. My. Goodness. Italian grilled chicken is the easiest and yummiest chicken ever! I cannot believe I've never tried it before. When I first came across the recipe I was a little bit hesitant.. I mean grilled chicken marinated in italian dressing? That's it? No way it can be that delish, right? WRONG. I also had a fear that the chicken might have some overpowering vinegarish taste to it but I was wrong again. This chicken was fab! And paired with my amazing roasted asparagus, it was the perfect meal. (And healthy, too!)

Ingridents:
1 lb. chicken breasts (About 3)
Bottle of Italian dressing
That's it. Ha!

What to do:
1. Marinate the chicken breasts in italian dressing for at least 4 hours (the longer you marinate, the better. I marinated mine all day)
2. Then grill! (I used my George Foreman)

Crazy how easy this sounds, I know. But it's delish!

Buffalo Mac & Cheese

Erin: For some strange reason, I have absolutely obsessed with anything buffalo flavored. I have been eating the buffalo chicken dip like crazy and I go out for a beer & buffalo wings whenever I get a chance. What is wrong with me?? Haha, anyway in order to satisfy my new strange craving, I made Buffalo Mac & cheese! Yum! It was really good. Sam doesn't even like mac and cheese but he loved this! Try it :)



Ingridients:
lb. pasta (I used Piccolinni)
3 boneless, skinless chicken breasts, cooked & cubed
1 tbsp. flour
4-6 tbsp. butter
1 1/2 cups milk
4 oz. grated monterrey jack cheese
1/3 cup sharply shredded cheddar cheese
1/2 cup buffalo wing sauce  (You MUST use Frank's Red Hot, it is awesome!) and more to top
1/3 cup Panko bread crumbs
Ranch dressing, to taste

What to do:
1. Cook pasta according to package directions, drain, and return to pot. 
2. While the pasta is cooking, heat saucepan over medium heat and add the butter.
3. Add the flour once the butter is melted and bubbly.  Whisk together to create a little roux and then cook for about 1-2 minutes until it starts to get a little golden in color
4. Add in the milk and turn the heat down to low.  Stir until the milk thickens and add in the cheeses.  Stir until the mixture is smooth. Add wing sauce
5. Lightly grease a 9x13 baking dish and add the pasta & cubed chicken.  Mix well so that the chicken is evenly distributed throughout the pasta. 
6. Pour cheese sauce on top and make sure everything's evenly coated
7. Now sprinkle with bread crumbs and extra cheese and cook at 375 for 25 minutes!

Top with extra buffalo wing sauce and ranch dressing! Yummy!
