Potato Latkes

For the Jewish woman in you! Ash, I know you probably have a latke recipe of your own for Chanukah, but this one is great and you can always fall back on it if needed.

What you will need:
1 lb potatoes
1/2 cup chopped onion
1 large egg, lightly beaten
1/2 tsp salt
1/2 cup olive oil

Directions:
1 Peel potatoes and grate by hand. Transfer to a bowl of cold water as grated. Soak potatoes 1-2 minutes and drain well
2. Spread grated potatoes and onion into kitchen towel and roll up jelly-roll style. Twist towel to ring out liquid
3. Transfer potato mixture to a bowl and stir in egg and salt
4.Heat 1/2 oil into a skillet over high heat until hot but not smoking
5. Spoon potato mixture into skillet and spread around to flatten.
6. Cook until brown
7. Season with salt and transfer to cooling rack

*Soaking potatoes in water keeps them from browning too quickly

*Serve with applesauce or sour cream
